CUCUMBER MOUSSE 
1 (3 oz.) pkg. lime Jello
3/4 c. boiling water
2 (3 oz.) pkgs. cream cheese, softened
1 c. salad dressing
1/4 tsp. salt
1 tsp. prepared horseradish
2 tbsp. lemon juice
3/4 c. diced cucumber
1/4 c. minced onion

Dissolve Jello in boiling water. Add cheese, salad dressing and salt. Beat until smooth. Blend in horseradish and lemon juice. Chill until thickened. Fold in cucumber and onion.

Pour into mold and chill until set. Serve on salad greens and if desired, garnish with cucumber slices. Yields 4-6 servings.
