CHICKEN TETRAZZINI | |
2 (4 oz.) cans whole mushrooms, drained 4 lg. chicken breasts or 4 c. chicken pieces 2 cans cream of chicken soup, undiluted 12 oz. spaghetti, broken in half or 12 oz. Kluski noodles 1/4 c. butter 2 c. sour cream 1/2 c. white wine or 2-4 tbsp. sherry 1/4 c. pimento strips Grated Parmesan cheese Cook breasts, cut in large pieces. Saute mushrooms in butter and combine with soup, sherry, sour cream, and pimentos. Cook pasta as directed. Place small amount of sauce in 9 x 13 inch greased dish or pan, then layer noodles or spaghetti sauce, chicken, ending with sauce on top. Sprinkle generously with Parmesan cheese and bake at 350 degrees for 50-60 minutes. Serves 8. |
