ZUCCHINI BREAD 
2 eggs
1 c. oil
2 c. sugar
2 c. peeled & grated zucchini
3 tsp. vanilla
3 c. sifted flour
1 tsp. salt
1/2 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1 box coconut pecan frosting mix

Beat eggs until light and fluffy. Add oil, sugar, zucchini and vanilla; mix lightly. Add sifted ingredients and dry frosting mix. Bake at 325 degrees for 1 hour. Freezes very well.
