CHARLOTTE'S BROWN RICE 
1/2 onion
3 tbsp. oil
1 c. raw brown rice
1/4 c. raw lentils
1/4 tsp. cinnamon
2 1/2 c. water
1 tbsp. tomato paste
1/2 tsp. salt
1/2 c. raisins
1/2 c. nuts or seeds

Chop onion; saute in 2 tablespoons oil. Add rice. Combine tomato paste with water and cinnamon. Add to rice. Add lentils. Bring to boil. Cover, simmer 30 minutes. Preheat oven to 350 degrees. Stir in salt, nuts and raisins. Place in baking dish oiled with remaining 1 tablespoon oil and 1 tablespoon hot water. Bake covered 20-30 minutes. Serves 4.
