GRANDMA'S SWEET POTATO PIE 
3 sweet potatoes
3 eggs, beaten well
1/4 cup (1/2 stick) butter, softened
1/2 cup firmly packed light brown sugar
1/4 cup brown syrup
1 1/2 tsp. cinnamon
1/2 (3 oz.) box lemon pudding mix (not instant)
1 (12 oz.) can evaporated milk
1 tbsp. vanilla extract

Preheat oven to 450°F.

Boil sweet potatoes until tender. Peel and mash. Set aside to cool completely.

In a mixer add eggs, butter, sugar and syrup. Beat well. Then add cinnamon, pudding mix, evaporated milk and vanilla. Add to sweet potatoes and mix well.

Put into 9-inch pie shell. Place on the second shelf from the bottom of oven.

Bake at 450°F for 10 minutes, then lower oven to 350°F.

Bake until the middle of pie has completely risen, about 45 to 55 minutes.
