CORNISH HENS AND RICE CASSEROLE 
1 c. long grain rice (not instant)
1 envelope Italian salad dressing mix (lo-cal)
1 can cream of chicken or celery soup
2 thawed hens, cut in half
2 1/2 c. boiling water
Salt and pepper
Paprika

Spread rice in ungreased 3-quart shallow pan and bake at 375 degrees for 15 minutes, stirring occasionally, until golden. Combine dressing mix with 2 1/2 cups boiling water and then with the soup. Stir this into rice.

Season halves of game hens. Place cut side down on rice. Sprinkle with paprika. Cover tightly with foil and bake at 350 degrees for 1 hour. Uncover and bake 30 minutes more or until rice and hens are tender. Serves 4 generously.
