SPICY PORK KABOBS | |
2 lbs. lean boneless pork 1/4 c. peanut butter (smooth or chunky) 1 1/2 tsp. ground coriander 1 1/2 tsp. red pepper 1 tsp. ground cumin 1/2 tsp. black pepper 4 med. onions, minced 1 clove garlic, minced 1 1/2 tbsp. lemon juice 3 tbsp. soy sauce 1 tbsp. brown sugar Cut pork into 1 1/2 inch cubes and place in bowl. Combine remaining ingredients and pour over pork. Toss until coated on all sides. Cover and let stand in refrigerator several hours, tossing occasionally. Thread on skewers. Place on greased grill, about 4 to 5 inches from hot coals. Cook about 25 minutes turning to brown all sides. Serves six. |
