POTATO LATKE'S 
6 med. potatoes, pared
1 onion, peeled
2 eggs
1/2 c. flour
1 tsp. salt
1/2 tsp. baking powder
1/2 c. shortening or oil

Grate potatoes into large bowl. Squeeze out potato liquid. Grate onion and add to potatoes. Add egg, flour, salt and baking powder. Stir, make a smooth thick batter that will drop from spoon.

Heat 1/2 cup shortening in skillet. Drop batter from a spoon into skillet, to make 3 inch pancakes. Saute over medium heat until brown. Turn over, brown other side. Drain on paper towel. Serve hot, plain or with sour cream or applesauce. Makes 6 to 8 pancakes.
