FANCY RICE 
3 tbsp. butter
1 onion, diced
1 c. dry long grain rice
1 (10 oz.) can beef bouillon
1 (10 oz.) can beef consomme
1 med. can sliced mushrooms, drained
1 sm. can sliced water chestnuts, drained
1 tbsp. chopped pimento, drained (optional for color)
Salt and pepper to taste

Preheat oven to 375 degrees. In heavy oven-proof pan melt butter. Cook onion in butter until transparent. Add rice and stir-fry until light tan in color. Add other ingredients. Bring to a rolling boil. Remove from heat. Cover; bake for 45 minutes. Serves 6-8.
