SWEET AND SOUR CHICKEN 
4 c. boneless chicken (or rabbit or pork)
1/2 tsp. salt
1 tsp. soy sauce
Flour
1-2 eggs, beaten
1 sm. can chunk pineapple
1 firm (3") tomato, cut into wedges
1 (3") purple onion, cut into wedges
1 green bell pepper, cut into wedges

Use sweet and sour sauce, canned or recipe following.

Cut meat into 2 inch cubes or bite-size pieces. Mix salt, soy sauce and eggs. Put meat in mixture and stir until it is coated. Roll in flour. Deep fry 2-3 minutes if meat is raw. If meat is cooked, stir fry until browned. Remove from pan.

Brown onion and pepper in 1 tablespoon oil for 1/2 minute. Add sweet and sour sauce; cook 1 minute. Add tomato and pineapple chunks, cook 5 seconds. Add meat to reheat. Serves 4-5. Goes well with rice. Got this recipe from my aunt Hursa Coen, who got it from a daughter-in-law.
