BAKED SALMON WITH CHEESE
STUFFING
 
1 1/4 lb. salmon
1 c. chopped onion
1 c. grated Cheddar cheese
salt and pepper to taste
1/3 c. sliced almonds
2 c. chopped crackers
1/4 c. butter
2 tbsp. parsley
2 tsp. powdered mustard

Cook onion in butter until tender, 7 minutes. Add remaining ingredients and mix. Layer the mix in a 1.5-quart loaf pan (Pyrex), starting with the mix, then the salmon. Top with sliced almonds.

Bake at 350°F for 35 to 40 minutes.
