IRISH SODA BREAD 
4 c. flour
1/2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 1/2 tsp. caraway seeds
1 c. raisins
1 egg, at room temperature
2 tbsp. liquid shortening
1 1/2 c. buttermilk, at room temperature

Put first 6 ingredients in mixing bowl and stir well. Add raisins and mix. Add beaten egg and shortening and stir. Gradually add buttermilk until firm but not stiff dough. Put on lightly floured board and knead for 2 minutes until smooth. Work dough into round loaf and put in well greased 9 inch layer cake pan. Cut in 4 inch cross in center of loaf with sharp floured knife and bake in 375 degree oven 40 minutes or until done. Put milk on top of bread before baking and sprinkle with sugar to glaze.
