FISH WITH ZUCCHINI AND RED
PEPPER
 
1 lb. fish fillets, divide in 4 servings
Pepper to taste
1/4 c. minced celery
1/2 c. minced onion
1/2 c. julienned zucchini
1 tbsp. parsley
2 tbsp. lemon juice
1 sweet red pepper, julienned

Place fish in baking dish, sprinkle with pepper. Combine all vegetables except red pepper. Cover fish with vegetables. Top with red pepper and cover with foil. Bake at 400 degrees for 15 minutes. Let stand covered for 3 to 4 minutes before serving. Equals 1 protein, 1/2 cup cooked vegetable.
