COCONUT PRALINE CANDY 
2 c. granulated sugar (white)
1 c. water
1 tsp. vanilla extract
2 tbsp. butter
2 qt. saucepan
Shredded coconut
Food coloring (optional)

Dissolve sugar in water; bring to a boil over medium heat. Continue boiling until thickened and white bubbles appear to hold. Stir to prevent sugar formation sticking to sides of saucepan. Test by putting a drop from spoon in cold water or on wax paper; if soft ball is formed add coconut and continue stirring. Add vanilla; stir. Add butter and remove pan from heat. Drop by spoonfuls on wax paper to desired size.
