EVERYDAY COFFEECAKE 
1 1/2 c. sifted flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1 egg
3/4 c. sugar
1/3 c. melted butter
1/2 c. milk
1 tsp. vanilla

Preheat oven to 375 degrees. Sift flour, baking powder and salt. Set aside. Beat egg until frothy, then beat in sugar and butter until well combined. Add milk and vanilla. With wooden spoon, beat in flour mixture until well combined. Pour into greased 8 x 8 x 2 or 9 x 1 1/2 inch cake pan.

CRUMB TOPPING:

1/2 c. sugar
1/4 c. sifted flour
1/4 c. soft butter
1 tsp. cinnamon

Mix ingredients of topping lightly with a fork until crumbly. Sprinkle over batter. Bake 25 to 30 minutes.
