3/4 c. firmly packed brown sugar 1/2 c. softened butter 2 eggs 2 c. all purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 c. buttermilk 1 c. chopped dates 1/2 c. chopped walnuts 2 tsp. grated orange peel Heat oven to 350 degrees. Grease and flour bottom only of 9"x5" loaf pan. In large bowl, cream sugar and butter until light and fluffy; beat in eggs. Lightly spoon flour into measuring cup; level off. Blend together flour, baking powder, soda and salt. Add flour mixture alternately with buttermilk, beginning and ending with dry ingredients. Blend well after each addition. Stir in dates, nuts and orange peel. Pour into prepared pan. Bake at 350 degrees for 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; remove from pan. Cool completely. Makes one loaf. |
