BAKED BEANS 
3 lbs. northern beans
1 tsp. baking soda
1 1/2 c. white sugar
1 1/2 c. brown sugar
9 tbsp. pure maple syrup
3 tbsp. molasses
6 tsp. salt
1 tsp. dry mustard
1 onion, chopped
1/2 lb. bacon, cut up
6 c. water

Soak beans overnight. Drain, add 1 teaspoon baking soda and cover with water. Bring to a boil until soda bubbles up. Drain, cover with water again and simmer 15 minutes. Drain once more and put in large casserole. Mix sugars, syrup, molasses, salt, mustard, onions, raw bacon and water. Pour over beans. Bake at 275 degrees for 7 to 8 hours. Remove cover the last 2 hours to brown beans.
