SCOTTSDALE POTATOES 
1 (2 lb.) bag frozen hash browned potatoes, thawed
2 1/2 c. grated sharp Cheddar cheese
2 c. sour cream
1 can cream of mushroom soup
1/2 c. finely chopped onion
1/2 stick melted butter - salt and pepper
2 c. crushed cornflakes
1/2 stick melted butter

Preheat oven to 350 degrees. Grease 7 x 10 inch glass baking dish. Combine first 6 ingredients in large bowl. Season with salt and pepper. Transfer to baking dish. Mix cornflakes and melted butter. Sprinkle over potatoes. Bake 45 minutes or until well browned. Serve immediately. Serves 8-10.
