MUSHROOM QUICHE 
1 pie shell
1/2 lb. fresh mushrooms, sliced
1/4 c. sliced green onions
1 tbsp. butter
1 c. shredded Swiss cheese (or Jack, or Mozzarella)
4 eggs, beaten
3/4 c. half and half or milk
1/4 c. grated Parmesan cheese
1/2 tsp. salt
1/8 tsp. pepper

Prepare pastry. Saute mushrooms and onion in butter. Stir together mushrooms and Swiss cheese. Put in pie shell. To the beaten eggs, add all remaining ingredients. Beat until blended. Pour over mushroom mixture. Bake at 450 degrees for 10 minutes. Reduce temperature to 350 degrees and bake 25 to 30 minutes longer. Let stand 5 minutes before serving.
