WUN-TONS 
1/2 lb. ground pork
1/4 c. finely chopped shrimp
4 water chestnuts, finely chopped (optional)
1/2 scallion, chopped finely
1 tbsp. soy sauce
1/2 tsp. sugar
1 tbsp. ginger wine
2 tbsp. cornstarch
1 egg beaten for sealing
1 pkg. shoe-mai wrappers

Mix all ingredients together, if loose add more cornstarch. If using shoe-mai wrappers form into crescent then fold both ends, won-tons fold into triangle then match both ends. Bring 2 quarts water to hard boil and add won-tons cooking for 10 minutes. If steaming, cook 25 minutes.
