CHILI PIE 
1 lb. ground beef
1 can kidney beans (16 oz.)
1 can hominy or corn (16 oz.)
1 can tomatoes (16 oz.)
1 pkg. corn muffin mix (6 1/2 oz.)
1 onion (chopped)
Spices:
1 tsp. ground cumin
1 tbsp. chili powder
Salt, pepper & garlic to taste
1 tbsp. sugar

Brown meat at medium heat and chopped onion. Add 1 cup water and simmer 10 minutes. Add spices and tomatoes. Simmer another 10-20 minutes. Add more water as necessary.

Put kidney beans and hominy (or corn) drained) in casserole or baking dish. Add about 2 tablespoons of cornmeal mix to chili and cook until consistency of gravy. Pour chili mix over beans and hominy in casserole. Mix rest of muffin mix to about consistency of thick pancake batter and pour over top of the casserole. Bake in oven at about 350 degrees until crust browns. Serve while hot. Some people like to add chopped onion to each serving.
