POTATO CHIP SURPRISE 
4 chicken breasts
1 bag of potato chips
2 cups chicken broth
1 box stuffing mix
1 bag mixed vegetables
1 can cream of chicken soup

Boil chicken, set aside to cool. Debone and cut into bite size pieces. Cook vegetables. Cook stuffing according to package. In a large bowl, mix broth, chicken, vegetables, stuffing and soup. Spray 9 x 13 pan with Pam. Crush the whole bag of chips. Put half the chips in the pan and spread evenly. Spread chicken mixture over chips, and top with remaining chips.

Bake at 300°F for 35 minutes.

Makes 8 servings.
