SPINACH SALAD WITH HOT BACON
DRESSING
 
1 lb. fresh spinach, torn
3 hard-cooked eggs, sliced
4 slices bacon, diced
1/4 c. sliced green onion
1/2 c. sliced fresh mushrooms
2 tsp. brown sugar
1/8 tsp. salt
1 1/2 tbsp. vinegar
1/8 tsp. dry mustard
Dash paprika

Place spinach and sliced eggs in large salad bowl and set aside. Cook bacon in medium skillet until crisp. Add onion and mushrooms. Saute until tender. Stir in next 5 ingredients. Cook until thoroughly heated, stirring constantly. Pour hot mixture over spinach and toss lightly. Serve immediately. Yield: 6 servings.
