MOTHER GOSS' DOUBLE DECKER
COOKIES
 
3/4 c. shortening
3/4 c. sugar
1 egg
1 c. molasses
4 c. flour
1 tsp. salt
2 tsp. ginger
1 tsp. baking soda

Put shortening, egg, sugar and molasses in bowl; beat until light. Add sifted dry ingredients a little at a time. When mixed, roll thin on lightly floured board. Cut 1/2 of dough with 3" round cutter. Use 3" doughnut cutter for other half of dough. Bake on greased cookie sheet. Bake at 350 degrees for 10 to 15 minutes. When cool, put filling on the cookie with no hole and the one with hole on top.

FILLING: Cream 1 tablespoon butter and 1/2 cup sifted confectioners' sugar. Add 1/8 teaspoon salt, 1/4 teaspoon ginger and beat in 1 tablespoon of boiling water. Add 1 1/2 cup confectioners' sugar alternately with 1 more tablespoon of water, if needed. Filling should be quite thin, but not runny.
