CHEESY BAKED EGGS WITH SPINACH 
4 eggs
8 slices (1/2 oz. each) American cheese
1 (10 oz.) pkg. frozen chopped spinach, cooked and salted according to pkg. directions
4 tbsp. grated onion
4 tbsp. butter
Salt to taste
Pepper to taste

In each of 4 individual casserole dishes, melt 1 tablespoon butter. Place 1 slice of cheese in each one, and top with 1/4 cup cooked spinach. Place 1 tablespoon grated onion on top of spinach in each dish. Follow with another slice of cheese, then break an egg to top each one. Salt and pepper the egg to taste, and bake at 350 degrees for 10-12 minutes.

Preparation time: 25 minutes. Yield: 4 servings.
