CREAMY BROCCOLI SOUP 
2 lbs. fresh broccoli, trimmed, stalks scraped
2 (13 3/4 oz.) cans chicken broth
3 c. milk
1 c. diced, cooked ham (optional)
1 tsp. salt
1/4 tsp. pepper
1 c. half & half
1/2 lb. shredded Swiss cheese
1/4 c. butter, softened

Put broccoli and chicken broth in large saucepan. Heat to boiling. Cook, covered, for 7 to 8 minutes or until broccoli is fork-tender. Drain; save broth. Puree broccoli in blender or food processor. Add milk, ham, salt, and pepper to broth. Heat to boiling; simmer 5 minutes. Stir in remaining ingredients and broccoli. Cook just until heated through; do not boil. Serve hot or cold. Makes 6 to 8 servings.
