MASHED POTATO FUDGE 
3 sq. (3 oz.) unsweetened chocolate
1/4 c. (1/2 stick) butter
1/3 c. cold mashed potatoes
1 tsp. vanilla
1 dash salt
1 lb. (4 c.) powdered sugar
Chopped nuts, if desired

Melt chocolate and butter over low heat or microwave. Remove from heat. Add potatoes, vanilla and salt (nuts if wanted). Mix well. Blend in sugar and mix. When mixture is moistened turn out on board, knead until smooth and thoroughly mixed. Press into a 8 inch square pan. Chill. Cut into 1 inch squares. Makes 1 1/2 pounds. You can use instant potatoes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
