BEEF - SPINACH CASSEROLE 
1 lb. ground beef
1 (4 oz.) can mushrooms, drained
2 (10 oz.) frozen chopped spinach
1 c. sour cream
1/2 c. shredded cheddar cheese
1/2 c. grated Parmesan cheese
1/4 c. milk
2 tbsp. onion soup mix
1 c. herb croutons
3 tbsp. butter, melted

In a 10-inch skillet, brown ground beef; drain. Stir in mushrooms. Cook spinach according to package directions. Drain well.

Combine sour cream, cheddar cheese, Parmesan cheese, milk and dry soup mix. Stir into meat mixture along with spinach. Turn into 10x16x2-inch baking dish. Bake covered in 350 degree oven for 20 minutes.

Combine croutons and butter; mix well. Sprinkle on top of casserole. Bake uncovered for 10 minutes more. Serves 5-6.
