COUNTRY MEATLOAF 
1 1/2 lbs. ground beef
1/2 c. chopped onion
1 c. tomato juice
1/4 tsp. pepper
1 1/2 tsp. salt
1 egg
2 tbsp. diced celery
2 tbsp. diced green pepper
3/4 c. oatmeal

Beat eggs slightly. Add beef, onion, salt, pepper, celery, green pepper. Toss with a fork until blended. Lightly stir in tomato juice, then oatmeal. Shape into loaf and put in aluminum foil on rack in pan; be sure to spread foil so that fat runs away from loaf. Bake at 350 degrees for 1 1/2 hours.
