STRING BEAN SALAD 
1 lb. string beans
1 clove garlic
2 qts. water
4 tbsp. olive oil
2 tbsp. vinegar
Salt and pepper

Cut off tips of beans. Wash thoroughly. Place in boiling salted water and cook approximately 20 minutes (until tender). Drain. Cut in half. Place in wooden or glass bowl. Add oil, vinegar, garlic, salt and pepper. Mix thoroughly.

May be served warm or chill in refrigerator. Serves 6.
