DANISH CUCUMBER SALAD 
4 cucumbers, sliced thin
1/2 c. white vinegar
1/4 c. sugar
2 tbsp. chopped dill, fresh
1/4 tsp. white pepper
Salt

Make early to marinate. Cut cucumbers into paper thin slices. In large bowl, mix cucumbers with 2 teaspoons salt. Let stand at room temperature for 1 hour. Drain liquid from cucumbers. Stir in vinegar, sugar, dill, pepper, and 1 teaspoon salt until well mixed. Cover and refrigerate at least 3 hours before serving.
