BROCCOLI CORN BREAD 
1/2 c. butter
1/3 c. chopped onion
1 tsp. salt
3/4 c. cottage cheese
1 (10 oz.) frozen broccoli, thawed and drained
4 eggs, slightly beaten
1 (8 1/2 oz.) corn muffin mix
4 oz. cheese (Colby and Mozzarella)

Combine everything except the corn muffin mix and mix up. When mixed well add the muffin mix. Bake at 400 degrees in a 9 x 13 pan for 20 to 25 minutes.
