TOASTED RICE NUT STUFFING 
1 1/2 c. rice, uncooked
1 1/2 tsp. salt
1 c. chopped pecans or walnuts
1/2 c. butter
1/2 tsp. poultry seasoning
3 c. water
1 1/2 c. chopped celery
2 tbsp. chopped onion
3 c. fine soft bread crumbs, toasted
Salt and pepper to taste

Spread uncooked rice in shallow baking pan. Bake at 350 degrees for 10-15 minutes or until rice is light brown.

In saucepan, combine toasted rice, water and salt. Bring to a boil. Reduce heat, stir once, cover tightly and simmer 12-14 minutes, or until all liquid is absorbed. Remove from heat.

Cook celery, nuts and onion in butter until tender but not brown. Toss with rice, bread crumbs, poultry seasoning, salt and pepper. Makes enough stuffing for a 15 to 18 pound turkey.
