SPINACH BALLS 
2 (10 oz.) pkgs. frozen chopped spinach
1 sm. onion, minced
2 c. Pepperidge Farm stuffing mix
1/2 c. Parmesan cheese
4 eggs, beaten
1/2 tsp. thyme
Garlic powder
3/4 c. melted butter
Salt & pepper

Pre-cook and drain spinach very well. Mix all ingredients and chill at least 2 hours. Roll into balls and freeze on a tray. Store in freeze in plastic bag until ready to use. Bake at 350 degrees for 15 minutes or until lightly browned. Yield: 40 balls.
