1/2 lb. pitted dates, chopped 1/2 c. water 1/2 c. butter 2 c. plain flour 1/2 c. sugar (white) 1 tsp. baking soda 1/4 c. sugar 1/4 c. nuts, chopped 1 egg 1/2 tsp. salt 1/2 c. sugar (brown) For Filling: Cook dates, water, and 1/4 cup white sugar in saucepan until thick. Cool, then add nuts. Cookie Dough: Cream butter and add sugars gradually. Add egg and beat. Sift flour, soda, and salt. Add. Divide dough and roll each on waxed paper. Spread filling and roll up like jelly roll. Place roll in refrigerator to chill several hours. Slice thin and bake on greased cookie sheet at 250 degrees for 10 to 12 minutes. Yield: 4 to 5 dozen. |
