2 c. sugar 1 1/2 c. oil 2 eggs 2 bananas 1 (6 1/2 oz.) can crushed pineapple 1 c. coconut 2 1/2 c. flour 1/2 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1 1/2 tsp. banana flavoring 1 1/2 c. nuts (pecans, or half pecans and half walnuts) In large bowl, mix well sugar and oil. Add the well beaten eggs, the mashed bananas and the pineapple and juice. Add the coconut and blend well. Sift together flour, salt, soda and cinnamon. Add to the other mixture and blend well. Fold in chopped nuts; blend. Add flavoring. Bake in a greased and floured bundt pan for 45 to 55 minutes at 350 degrees. Good without icing or may be glazed. Freezes very well. |
