APRICOT PIE FILLING 
1 1/2 lbs. dried apricots
1/2 c. granulated sugar
1 tbsp. lemon juice
1 tbsp. butter
1 tbsp. cornstarch
1/2 c. hot tap water

Place apricots in large pot covered with water and cook on medium until mushy. Be sure to keep enough water on apricots to keep them from sticking to bottom but not too wet. Apricots will expand when cooked. Next take cornstarch and hot water and shake in a jar until dissolved. Add to apricots and stir. Then add other ingredients and stir, let stand while you make pie crust.

My grandma used to make pie filling like this but with 4-5 cups of fresh apricots from our tree out back. I lost the recipe and this is was the only recipe I could find online. This was perfect. Thanks!

Made this recipe using a can of apricots in juice. Used the juice instead of water and it was perfect. Been trying to find a way of making apricot pie filling ever since I couldn't buy it any more so thank you very much.
