LOW-CAL MANDARIN ORANGE SALAD 
8 c. lettuce
2 tbsp. minced parsley
1/4 c. green onions, sliced
1 1/2 c. mandarin oranges, packed in own juice, drained, no sugar added
1 oz. slivered almonds
1 tsp. butter

DRESSING:

1/4 c. vegetable oil
2 tbsp. white vinegar
2 tbsp. sugar
1/2 tsp. salt
1/4 tsp. pepper

Wash and tear lettuce into bite-size pieces. Toss with parsley, onions (sliced with some green) and oranges. Chill. Mix dressing ingredients in a small jar and chill thoroughly. Toast almonds in butter, salt lightly and let dry on paper towel. Toss salad with dressing and almonds just before serving. Serves: 6.
