SUMMER SQUASH 'N TOMATO 
1/4 c. butter
4 c. thinly sliced yellow squash
1 sliced onion (opt.)
1 tsp. salt
Dash of pepper
1/4 c. water
2 tomatoes, peeled & cubed
1/2 c. grated American cheese
Soy sauce to taste

Melt butter in skillet. Add squash, onion, salt, pepper, water and tomatoes. Cover, simmer 12 minutes. Sprinkle with soy sauce and cheese. Stir. Cover and simmer another minute or two. Serves 4 to 6.
