6 egg whites 3/4 tsp. cream of tartar 2 c. sugar 1 tsp. vanilla 2 c. soda crackers, crumbled 3/4 c. chopped nuts 1/2 pt. whip cream 2 tbsp. sugar 1/2 tsp. vanilla 1 (21 oz.) can cherry pie filling Beat egg whites until foamy. Add cream of tartar and beat until stiff. Add sugar very gradually and vanilla, then beat until very stiff. Add crackers and nuts with spoon to egg whites. Grease large Pyrex dish and bake at 350 degrees for 20 minutes. Cool completely and beat whip cream and sugar and vanilla; spread on baked egg whites mixture. Spread pie filling on top of whip cream; refrigerate. |
