SUPER WAFFLES | |
1/2 cup rolled oats 1/3 tsp cinnamon Dash of nutmeg 1 tbsp vanilla extract 1 cup applesauce 2 cups flour 2 tsp baking powder 2 tbsp powdered sugar 2 tbsp brown sugar 1/2 cup hot water 1/2 cup cold water 1 banana 2 eggs 1 tbsp vegetable oil In a medium/large mixing bowl, place dry rolled oats, spices, salt, vanilla, and sugars together and mix. Add the hot water, mix only enough to combine, then set aside for a moment for the oats to soften. While waiting, beat eggs and vegetable oil together. Add applesauce, flour, baking powder,and eggs to the oat mix. Peel and smash the banana to a pulp, then add. Stir all ingredients together, then add the eggs/oil blend. Add the cold water and mix until waffle batter is complete. Add small increments of water or flour to achieve desired consistency. Pour into hot waffle iron and cook for about three minutes, until steaming slows. (Instead of adding syrup to the top, try using Go-Gurt! The kids still love it and it's not so sugary.)
