PINEAPPLE - GINGER CAKE 
1 pkg. yellow cake mix with or without pudding
1 env. Dream Whip
1 pkg. vanilla cook pudding
1 (20 oz.) can pineapple
2 1/2 tsp. ginger
1 or 2 tsp. pineapple flavoring
1/3 c. oil
4 eggs
Water

TOPPING:

2 tbsp. butter
1/4 c. light brown sugar
1 (3 1/2 oz.) can flaked coconut (1 1/3 c.)
1/2 to 3/4 tsp. ginger (to taste)

Preheat oven to temperature on cake box. Grease and flour a 9 x 13 inch pan. Drain pineapple, keeping juice; set pineapple aside. Add water to juice to make the amount of liquid on cake box. Beat Dream Whip with 1/2 cup cold pineapple juice; beat until stiff, then add rest of juice, eggs, oil, pudding, cake mix, flavoring, and ginger. Beat well. Bake as directed on cake box.

About 5 minutes before the cake is done, in a small saucepan, melt butter; add brown sugar, coconut, ginger, and pineapple; stir well. When the cake is done, take it from oven and place topping on cake with a fork. Then place in a broiler with the top of cake about 4 inches from the heat for about 2 minutes.
