MEAT AND CHEESE MUFFINS 
1/2 c. ground beef
1/2 c. shredded Cheddar cheese
1 tbsp. finely chopped onion
1/8 tsp. salt
Dash pepper

Preheat oven to 425 degrees. Grease a 12-cup muffin pan. Mix all ingredients for meat filling. Shape into 12 patties the size of muffin cup.

MUFFINS:

1 c. flour
1 tsp. baking powder
1/2 c. milk
1 tbsp. butter, melted
2 tbsp. sugar
1/2 tsp. salt
1 egg, beaten

In a large bowl, combine all dry ingredients. In a small bowl, combine milk, egg and butter. Add milk mixture to dry ingredients and stir until milk is absorbed. Don't over beat; the mixture should be lumpy. Spoon about 1/2 tablespoon batter into each muffin cup; top each with a meat patty and then another 1/2 tablespoon batter.

Bake 20 minutes; reduce heat to 300 degrees; bake 10 minutes until golden brown. Cool on wire rack.
