CRANBERRY ORANGE DROP COOKIES 
2 cups all purpose flour
1 cup quick-cooking oats
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1 cup brown sugar, firmly packed
3/4 cup butter or vegetable shortening
2 eggs
1 tbsp. freshly grated orange rind
2 tbsp. Grand Marnier or frozen orange concentrate
2-3 drops pure orange oil (optional)
1 cup Craisins (dried cranberries)
1/2 cup chopped Macadamia nuts or almonds

Preheat oven to 375°F.

In a bowl, combine flour, baking soda, spices and salt. Stir in quick-cooking oats and set aside.

In a separate bowl, beat shortening, gradually adding brown sugar. Add eggs, orange rind and Grand Marnier or orange concentrate and drops of pure orange oil.

Stir in flour mixture until well combined (do not overmix). Stir in Craisins and chopped nuts.

Drop by rounded teaspoonfuls onto greased parchment lined baking sheets. Press down lightly with a fork.

Bake in preheated oven for 10-12 minutes.

Makes 3-4 dozen, depending upon size of cookies.
