FLANK STEAK FLORENTINE | |
2 1/4 lb. flank steak 3 tbsp. butter 1 sm. onion, diced 1 garlic clove, minced 2 oz. sliced mushrooms 1 (10 oz.) pkg. frozen spinach 1 1/2 c. bread crumbs 1/2 c. chicken broth 1 1/2 c. cheddar cheese, grated Preheat oven to 350 degrees. Pound steak on both sides. In large skillet, heat butter, add onion, garlic and mushrooms. Saute lightly for 3 minutes. Add chopped spinach to skillet with bread crumbs and broth. Spread mixture over steak. Sprinkle with cheese and roll like jelly roll. Bake, covered in oven for 2 hours. |
