VELMA'S CHOCOLATE CUPCAKES 
1 c. flour
1/4 tsp. salt
3/4 tsp. baking soda
1/4 c. butter
1/4 c. sour cream (or may substitute 1/4 c. milk with 1 tsp. vinegar)
1 egg
1 c. sugar
3 tbsp. cocoa
1 tsp. vanilla
1/2 c. boiling water

Sift dry ingredients (flour, sugar, salt, cocoa, and soda). Add 1/4 cup butter to boiling water, stir and pour into dry ingredients. Add remaining ingredients (vanilla, sour cream and egg). Beat well. Pour into cupcake liners. Bake at 350 degrees for 15 minutes or toothpick test. So moist they don't need frosting; but you may frost or sprinkle with powdered sugar.
