BURRITOS 
1 lb. pinto beans
Onion
Picante Sauce
Burrito size tortilla shells

Soak pinto beans overnight. Drain and cover with fresh water. Add 1 whole onion, salt and pepper to the water. Cook over medium heat. When beans are soft (1 to 1 1/2 hours), remove onion and discard. Melt vegetable shortening in fry pan, saute 1 chopped onion. Add beans and mash. Add picante sauce or use chopped tomato, green pepper and green onion. Place small amount of mixture in burrito size tortilla (ready made) and roll. Bake in 350 degree oven for 15 minutes and serve with additional sauce.
