CHILE RELLENO PIE 
1 lb. ground beef
1 med. onion, chopped
15 fresh green chilies, roasted, peeled
1 c. half and half
2 tbsp. flour
4 eggs, separated
3/4 lb. Monterey Jack cheese
3/4 lb. cheddar cheese
Salt and pepper to taste
1 garlic clove, minced

Brown meat with onion and garlic. Meanwhile, spread 1/2 of the chopped chilies in a 9 x 13 pan. Cover with half the meat and cheeses. Repeat. Beat the egg yolks until fluffy, then add spices, flour and half and half. In separate bowl, beat egg whites until stiff, then fold into yolk mixture. Pour over the layered chilies and meat. Bake 45 minutes or until set.
