BANANA QUICK BREAD | |
1/3 c. shortening 2/3 c. sugar 2 eggs, slightly beaten 1 3/4 c. sifted flour 2 3/4 tsp. baking powder 1/2 tsp. salt 1 c. mashed ripe bananas Beat shortening until creamy and glossy. Gradually add sugar, beating thoroughly after each addition. Add eggs and beat until thick and pale yellow in color. Sift dry ingredients, add alternately with bananas to above. Blend thoroughly after each addition. Grease bottom only of loaf pan. Bake 60 to 70 minutes or until tester comes out clean and dry. Bake at 350 degrees. Let cool and turn onto rack. You may vary the bread by adding your choice of 1/2 cup nuts, 1 cup mixed candied fruit, or 1/4 cup raisins. |
