RANCH POTATOES 
4 lg. baking potatoes, unpeeled
1 lg. onion, chopped
4 tbsp. plus 1 stick butter
1/2 c. cooked, crumbled bacon
4 heaping tbsp. lemon pepper seasoning
1/2 tsp. salt
1/8 tsp. garlic powder
1/2 c. water

Partially cook potatoes in microwave oven until they begin to get soft (about 15 minutes). Saute onion in 4 tablespoons butter until tender but not brown. Quarter potatoes, but do not peel. Put into a 4 quart baking dish and sprinkle with lemon pepper. Sprinkle with salt and garlic powder.

Top with sauteed onions and bacon bits. Cut 1 stick of butter into pieces and dot top of potatoes. Add water to casserole. Cook uncovered in oven for 15 to 20 minutes or until potatoes are soft. Makes 6 to 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
